When I was first diagnosed with diabetes in 2008, I did lots of research on food, mainly healthy recipes.
Many sites regarding diabetes recommended eating homemade soup, as a way to control appetite and eat a hot and healthy meal.
I started out eating canned soups, but soon got into the habit of making my own soup. Now I keep at least one type of soup in the freezer. When combined with a fresh green salad, a bowl of soup (about one cup) makes a fast and healthy meal for me when I get home from work.
I read Angie’s Healthy Living blog all the time–she’s got some super recipes.
Angie’s recipe for slow cooker chicken broth, linked above, is my starting point.
Angie’s slow cooker chicken broth makes an excellent soup starter, and I’m making a pot of soup for today, for the week.
I usually add whatever vegetables I have on hand. Today I added one fresh tomato, onion, mushrooms, celery, carrots, brown rice (which I also cook ahead and keep in the freezer) and some frozen corn.
Oh yes,I also add lots of fresh garlic to every soup I make!
**Forgot to mention that I usually add a fresh Jalapeno to my soups–gives my soups some flavor with using salt. I did not have any today, so this pot o’ soup doesn’t have the usual kick that my creations have!
I also make beef soup from scratch, and once in a while make a nice hearty lentil soup (my family will tell you that I’m not a big fan of legumes (but I’m trying).
I still tend to make too much of everything, especially with soups, because I just keep throwing stuff in he pot.
These soups freeze very well.
And there’s one more thing–these soups are really cheap to make!

I started feeling a bit perkier last night, and feel even better this morning.
Today I’m not going to set the world on fire with home projects, although I do need to get some laundry done.
It’s warmer in Seattle, we are getting some rain today but there’s also a rumor that sun will be seen today.
Yesterday I bought some Tropicana orange juice that has 50% less sugar and calories.
I had my 1/2 cup this morning, and it’s not too bad. Kind of tart, which is just the way I like my o.j.
So I’m enjoying my last day off, in this blissfully boring life that I have chosen for myself, by taking time to read the Sunday Seattle Times print version, enjoy my coffee, and listen to soft rock music (Rod Stewart is singing now).

I only stayed at my son’s house one hour last night, for our makeup Thanksgiving dinner with the kiddos.
I came home and went to bed at 7:00 a.m., stayed in bed until almost 9 this morning.
So with two more days off, I’m devoting myself to getting better.
Being sick sucks, for sure, but the only thing to do is to deal with it.

I’m not doing any Christmas shopping today.
Too many people!
In the United States, Black Friday has historically been the start of the Christmas shopping season; this year, many stores were open on Thanksgiving Day. Many people get their Christmas shopping done today.
Too intense for me.
If you are shopping today, I wish you good luck–it sounds like there are lots of flat screen televisions for sale.
Seattle shoppers are enjoying clear roads and higher temperatures today, so I’m sure the area stores are packed with eager bargain hunters.
Be safe out there if you are braving the crowds today!

One thing I’ve learned about getting older is that every day is a gift.
And every day is an opportunity to give thanks.
So–my Thanksgiving Day has not gone as planned.
There’s been a horrible cold going around the Seattle area, for at least a few months. Many people at work have been sick. I had a sore throat, off and on, for a few weeks, but didn’t get the cold.
My grandchildren and daughter-in-law were sick, off and on, for a month.
Well I finally got the dang cold this week. My throat is not sore, but there’s a wad of crap in my throat, and my ears feel kind of weird.
I’m not running a temperature, but I’m sneezing a lot.
Thanks to bad weather, my son decided to stay in Bellingham (an excellent choice, thanks to the bad roads and iffy weather around Washington State), and I decided to stay home today and try to get rid of this nasty cold.
I do not want to give this yuck to anyone, especially my family.
So I’m home today, watching the Cake Boss marathon, disinfecting my bathroom, washing my sheets, and cooking up some sugar free cranberry sauce.
For dinner, I’m broiling a small steak, baking a small yam, and enjoying some fresh grilled asparagus. And 2 ounces of red wine.
My turkey is thawing in the refrigerator now, as I had planned to cook tomorrow so that I can have my own leftovers (yum). I will be joining my son and grandchildren tomorrow night for a small dinner.
So here’s what I’m thankful for, today (and every day), but especially today:
- My family, as always.
- The temperature is rising, and it’s raining right now.
- The snow we got the other day is melting (see above).
- I have a job, a great apartment, and I’m living the life I want to live.
- All things considered, my health is pretty good right now.
